I can't enable that without running the sound through the 3.5mm jack on the mobo, and I don't have any devices that accept that as an input. The only option I have in audio output when I disconnect the audio interface is the monitor.

I’d rather not update my BIOS again, that always makes me feel a bit squicky about bricking my machine. I did update a few months back, so it’s not running the BIOS from 2022 or whenever the mobo was manufactured.
If you have been taking Drivers from Windows Update that maybe your issue especially if taking Sound and or GPU Drivers. Use the GPU remove the drivers with : DDU
NOTE : your DDU version is out of date. Should install a fresh version each time you use it.
It was up to date when I installed it, looks like leftover software from when I did a wipe/reinstall of the audio drivers.

AMDRyzenMasterSDK is really only needed if Overclocking. Chipset from SM/B Support Page would be fine running that.
When you did the last Clean Install in 2023 (I think) was the 1st thing you installed after Windows was your Chipset then SATA Drivers and then to lower drivers with sound last ?
If this was not done then you need to install all your drivers.
A clean install would be also suggested if did not do so as mucked up by Microsoft.
That sounds about right, I remember having to do a clean install since the prior version of Windows was embedded Windows 8 and was eligible for an upgrade. I did install the audio drivers after that, and have tried a couple different versions of the drivers in the hopes an older version might work better, and I did an audio driver wipe between each.
