One of my favorite simple recipes is a classic spaghetti aglio e olio. It's super easy to make and tastes amazing. Just cook some spaghetti, sauté minced garlic in olive oil until golden, toss in red pepper flakes for a kick, then mix it all together with the cooked pasta. Top with some chopped parsley and grated Parmesan cheese, and you're good to go! It's perfect for when you want something delicious but don't feel like spending hours in the kitchen.

Tried it for the first time a few years ago in Rome, cannot count how many times I made it since then. Super simple and super delicious!

Thermos/vacuum flask cooked spaghetti, with tiny meatballs (Beef only Polpette) in tomato sauce.

Yes you read that right, pasta, rice, etc. can be cooked in a normal thermos flask.
(I hardly ever cook them any other way now).

Mini Meatballs: (You'll want at least a dozen of these per person, they are tiny).
Beef mince (ground beef), salt/pepper to taste.
Shape into small balls about half the size of a grape, chill in the fridge.
Air fry or pan fry for 3-4 mins to brown. (Tip: I do mine in an old pie foil in the air fryer, keeps the air fryer basket clean).

Sauce:
Tin of chopped tomatoes, dried herbs (I like Basil, Dill, and Marjoram), and a bit of garlic (powder or granules is fine), salt/pepper.
I add a tablespoon of the vinegar from a jar of pickled onions just to give a bit extra sharpness, you could use lemon or lime juice.
You can add water if you want a thinner sauce.
Microwave in a jug or bowl to boiling, stir then stand until ready to use. (The longer the better to let the flavours develop).

Spaghetti.
Simply put in a Thermos/vacuum flask with boiling water and leave for 20 mins.
Spaghetti won’t fit most flasks, - but it doesn’t fit pans on the stovetop either, - just let it stand a couple of minutes in the boiled water to soften then you can push the last bit down and fit the top on the thermos.
After putting the top on then shake and lay it on its side. Shake occasionally if you want to, it helps prevent the strands sticking together.

I usually do the sauce and meatballs earlier in the day, so the sauce can stand, but they don’t take long and you could do them as the spaghetti is cooking, the fiddliest bit is rolling the tiny meatballs.
Or you could do the sauce and the meatballs the night before and put in the fridge

When the spagetti is cooked - Drop the already fried meatballs into the sauce, add a knob of butter etc, if you want, stir and reheat in the microwave while you drain and plate the spaghetti.
Pour the sauce and meatballs over the pasta. (Sprinkle with cheese if wanted).

Crispy Potato Wedges:

 

-Peel potatoes;

-Cut in wedge shapes, at an angle; While cutting them rest all the potates (cut and to be cut) in a bowl of water

-Dry the potato wedges;

-Oil the wedges up and add spices to your liking;

-Bake at 450F for 15 minutes;

-Flip each wedged potato;

-Bake for another 15 minutes;
 

 

-Enjoy with the sauce of your choosing
 

Made this the other day for my partner at 2AM and they loved it.

Doing Tamales, eggs, and cheese today.  I buy the tamales though.  Experts better than me make em.

 

Any grocery store will have a dozen in the frozen section for 5 bucks.

 

The local La Nortena makes me fresh takeout .  It is the local tamale factory here.


Some times I take a crooked road to get my head straight.
